Tea-ramisu

We both love tiramisu, but sometimes it can be a bit strong with espresso. So … we decided to try a lighter version using On-the-Go Metro! After several tries, we also came up with an easy substitute for the traditional marscapone. And while you may find some type of ladyfingers in most any grocery store, for the most authentic texture go to an Italian grocer. Buon appetite! ~ Marlys

Ingredients

  • 1 8-oz pkg. cream cheese softened
  • 1/3 cup sour cream
  • 2 Tbls. sugar
  • 2 tsp. vanilla
  • 1/2 cup heavy whipping cream
  • 12 ladyfingers typically one package
  • 1 cup On-the-Go Metro brewed tea brewed double-strength
  • 2 tsp. baking cocoa powder

Instructions

  1. Brew 1 cup of On-the-Go Metro tea double-strength and set aside.
  2. Mix the cream cheese, sour cream, vanilla and sugar in a mixing bowl until smooth and creamy. Pour the whipping cream into a smaller, pre-chilled bowl and beat with an electric mixer on high speed until stiff peaks form. Using a spatula, gently fold whipping cream into cream cheese mixture.
  3. Arrange half of the ladyfingers in the bottom of a glass or ceramic loaf pan. Using a small ladle or drizzle spoon, pour half of the brewed tea over the ladyfingers to moisten them. Then spread half of the cream cheese mixture on top.
  4. Repeat the layers, arranging remaining ladyfingers on the cream cheese layer. Soak with remaining tea, then cover with the cream cheese mixture. Sprinkle cocoa powder on top, then cover and place in the refrigerator overnight.

Recipe Notes

Alternative: For a simpler filling, you may opt to use 2 cups of whipped topping instead of the heavy whipping cream.
