Horchata (Cinnamon Rice Milk)

While it does take a bit of work, this refreshing drink is definitely worth the effort! It’s great for Cinco de Mayo … or any other summer day. ~ Marlys

What is Horchata?

Although it looks like a milky drink, horchata (or-CHA-ta) is traditionally dairy-free.  The classic version featured below has a cinnamon-vanilla flavor, but there are also coconut and fruit versions.  Along with jamaica (hibiscus) and tamarindo, it’s a popular agua fresca, or ‘fresh water’ beverage available from Mexican bodegas and street vendors.

Horchata (Cinnamon Rice Milk)

Ingredients

  • 2/3 cup Uncooked rice
  • 3 cups Vanilla Island brewed tea
  • 1/2 tsp Cinnamon
  • 1/3 cup Sugar
  • 3 cups Cold water

Instructions

  1. Brew Vanilla Island tea slightly stronger than directed and let cool to room temperature. Pour uncooked rice into cooled tea, cover and soak in fridge overnight.

  2. The next day, pour rice mixture into a saucepan and warm on medium heat for about 5 minutes to soften the rice.
  3. Add cinnamon to rice mixture and puree in blender. Strain with a fine mesh strainer or cheesecloth.

  4. Stir in sugar and cold water, then mix well. Chill before serving or pour over ice. Serves 4-6.
