Chocolate Pasta

Ingredients

  • 1 cup Flour
  • 1 Tbsp Sugar
  • 2 Eggs
  • 1/4 cup Cocoa powder not Dutch process
  • 3 cups Chocolate Spice Chai brewed tea
  • 1/2 Tbsp Extra virgin olive oil

Instructions

  1. Brew tea and set aside.

  2. Combine flour, sugar, cocoa powder and a dash of salt in a large mixing bowl. Make a well in the center.

  3. Beat eggs and oil, then pour into the well.

  4. Use your hands to combine ingredients together. Add a teaspoon of Chocolate Spice Chai brewed tea at a time until the dough is workable.

  5. Pull it out of the bowl and place on a sheet of lightly floured parchment paper on a table or counter. Knead the dough for about 10 minutes, sprinkling with flour as necessary.

  6. Wrap dough in plastic wrap and place in fridge for 20 minutes.

  7. Take 1/3 of the chilled dough and roll into a rectangle about 1/8” thick. Cut into 1/4” wide strips with a pizza cutter (or use a pasta maker if you have one). Lightly coat with flour to prevent sticking together.

  8. Pour remaining brewed tea into a large saucepan and bring to a boil. Add some pasta and cook for about 2 minutes until noodles are tender.

  9. Once noodles are plated, top with our Pumpkin Sauce and sprinkle with Feta cheese.
