Tea-infused Butter

Butter-making jar

For years, we’ve wanted to create a tea-infused butter, but couldn’t figure out how to do it. Once we found the butter maker jar**, it was a snap! ~ Marlys

**Here’s a photo of the tool we used.

Ingredients

  • 1 cup Heavy whipping cream
  • 3-4 tsp A Walk in the Woods loose tea or your favorite flavor; chai works well too

Instructions

  1. Open the carton of whipping cream and carefully add A Walk in the Woods loose tea (or your chosen flavor). Shake to mix, then place in the refrigerator to steep overnight.

  2. The next day, place the carton on the counter for 1-2 hours to warm up a bit. Then using a fine mesh strainer, pour half of the whipping cream into a butter maker jar.
  3. Screw both caps on tight, then shake the cup vigorously for several minutes until you feel the liquid has separated and the cream has become more solid. Carefully unscrew the top of the cup which holds the built-in sieve.

  4. Drain, then rinse butter several more times with cold water, draining each time until liquid comes out nearly clear.

  5. Twist off the ramekin and gently press the butter to remove any remaining water. Scoop out into a dish with a lid, then repeat the process with the other half.
  6. Enjoy immediately or cover and store in the refrigerator for up to a week. (Let the butter soften a bit each time you pull it out of the fridge before using.)
