Tea-Poached Mahi Mahi with Mango-Peach Salsa

Ingredients

  • 1 cup Peach Dynasty brewed tea
  • 4 Mahi Mahi fillets
  • 1 Mango cubed
  • 2 Peaches diced
  • 1 Tomato diced
  • 1/8 cup Chopped green onion
  • Cilantro chopped

Instructions

  1. Brew tea, then pour 3/4 cup into a skillet. Gently place fish skin-side down. Cover, then simmer over medium-low heat for 6-8 minutes or until fish flakes easily with a fork.
  2. To make salsa, combine mango, peach, tomato, green onion, and cilantro in a mixing bowl. Pour in 1/4 cup of Peach Dynasty brewed tea and toss all ingredients together. (Flavor is best when salsa is made two or more hours before serving.)
  3. Place mahi mahi on serving plates and top with salsa. Serves 4 (with extra salsa).
