I like chewy cookies and I like the flavor of limes. So I combined the two when creating these cake-like treats using Miami Sunrise. They were the hit of our Spring Open House. ~ Alan
- 6 tsp Miami Sunrise loose leaf tea (or other lime flavor tea)
- 1/2 cup Water (for brewing tea)
- 1/2 cup Butter melted
- 1 1/4 cups Sugar
- 3 Eggs
- 3 1/4 cups Flour
- 1 tsp Baking Soda
- 1 tsp Baking Powder
Brew tea strong as directed using 1/2 cup of water, then strain the liquid into mixing bowl.
Mix in melted butter. Stir in sugar until completely moist, then mix in the eggs.
Add dry ingredients a little at a time, stirring well. If batter is too thin, add up to another 1/4 cup of flour. Batter will be soft, but will hold its shape.
Using an ungreased cookie sheet, drop one tablespoon of batter at a time to fill the sheet. Bake at 350º F for 10-12 minutes.
