Sunrise Cookies

I like chewy cookies and  I like the flavor of limes. So I combined the two when creating these cake-like treats using Miami Sunrise. They were the hit of our Spring Open House. ~ Alan

Sunrise Cookies

Ingredients

  • 6 tsp Miami Sunrise loose leaf tea (or other lime flavor tea)
  • 1/2 cup Water (for brewing tea)
  • 1/2 cup Butter melted
  • 1 1/4 cups Sugar
  • 3 Eggs
  • 3 1/4 cups Flour
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder

Instructions

  1. Brew tea strong as directed using 1/2 cup of water, then strain the liquid into mixing bowl.
  2. Mix in melted butter. Stir in sugar until completely moist, then mix in the eggs.

  3. Add dry ingredients a little at a time, stirring well. If batter is too thin, add up to another 1/4 cup of flour. Batter will be soft, but will hold its shape.

  4. Using an ungreased cookie sheet, drop one tablespoon of batter at a time to fill the sheet. Bake at 350º F for 10-12 minutes.
