Chicken with Berry BBQ Sauce
Servings 4
Ingredients
- 8 oz. Tomato sauce
- 1/4 cup Rhapsody in Blueberries brewed tea (for sauce)
- 2 Tbsp Vinegar
- 2 Tbsp Teriyaki
- 1/2 tsp Garlic powder
- 1/4 tsp Ground basil
- 1/4 tsp Tarragon leaves
- 1 cup Blueberries fresh or frozen
- 2 Tbsp Light brown sugar
- 4 Chicken breasts
- 3/4 cup Rhapsody in Blueberries brewed tea (for poaching chicken)
Instructions

Combine 1/4 cup of Rhapsody in Blueberries brewed tea along with other ingredients (except for chicken breasts) in saucepan. Bring to a boil, then turn down to simmer until berries soften, about 20 minutes.

Mash berries with a potato masher, then simmer about 20 more minutes or until sauce thickens.

Allow to cool, then cover and place in the refrigerator overnight to let the flavors mix.

The next day, poach chicken breasts in 3/4 cup of brewed tea. Once chicken is cooked, drain off remaining liquid. Spoon sauce over the chicken, cover and allow to warm in the skillet until sauce begins to bubble. Serves 4.
