
Scrub beets, peel, then cut into quarters. Place on a baking sheet covered with foil and roast at 375ยบ F for about 30 minutes or until fork tender. Remove from the oven and allow to cool for 10-15 minutes, then coarsely chop.
Combine all ingredients except for walnuts and feta in a food processor, then pulse until well blended.
To serve, top with chopped walnuts and feta cheese. Use corn chips, veggies or pita bread triangles (toasted in oven).
