
To make crust, cream butter and powdered sugar together, then use a pastry cutter to mix in flour, rice flour, salt & vanilla. Form a ball of dough, then press evenly into a 9x13” pan and place in fridge for 10-15 minutes.
Pre-bake at 350º F for 15-20 minutes or until golden brown.
Meanwhile in a large mixing bowl, whisk eggs until smooth. Whisk in coconut, lime juice and zest, brewed tea, and sugar. Carefully whisk in flour until well blended, then pour over hot crust and return to oven for another 25-30 minutes, or until filling is set.
Let cool for at least an hour on a wire rack before cutting into bars. Garnish with more lime zest if desired. Makes 18 bars.
