Quick Ham & Vegetable Soup

On rainy or snowy days, or when you’re not feeling well, nothing comforts like soup. So here’s a recipe that also includes tea to help you feel better. ~ Alan

Quick Ham & Vegetable Soup

Course Soup

Ingredients

  • 2 c Chicken broth
  • 2 c Water
  • 1 can Golden mushroom soup
  • 1/4 lb. Ham cooked & cubed
  • 1 t Garlic powder or 1 fresh clove
  • 1 t Tarragon
  • 2 t Classic Assam tea
  • 1 c Green beans
  • Salt to taste if needed

Instructions

  1. Add all ingredients to a stock pot and heat until steaming. Steep tea (using an infuser or tea filter) in the soup for up to 5 minutes, then remove tea.
  2. Add more water or vegetables as you would like. Use the suggested vegetables or add your favorites -- carrots, cabbage, peas, etc. -- just look in your freezer. Continue heating until hot throughout. Serve with a dollop of sour cream and chopped green onions.
